- 1 bunch spinach
- For the batter
- 1 cup gram flour
- 1/4 cup rice flour
- 1/4 tsp carom seeds
- 1 tsp red chilli powder
- 1/2 tsp turmeric
- to taste Salt
- 1 tbsp crushed coriander seeds
- 1 tbsp crushed cumin seeds
- For yoghurt
- 1 cup thick yoghurt
- to taste Salt
- 1/2 tsp black salt
- 1/4 tsp roasted cumin powder
- 1/2 tsp chaat masala
- For assembling
- as required Tamarind chutney
- as required Green chutney
- as required Prepared yoghurt
- as per need Sev
- as required Namakpara
- as per taste Ginger julienne
- as required Fried peanut
- as per required Black salt
- as required Roasted cumin powder
- as required Chaat masala
- as required Crushed coriander and cumin seeds
- as required Coriander leaves or fried spinach leaves
Instructions to make to make Palak Patta Chaat(Spinach Leaves Chaat)
- In a big bowl mix all the ingredients of batter mentioned above. Crush the carom seeds between your palm then add. Now mix it very well then slowly and gradually add water and make a smooth lump free batter of it. The batter must be very smooth and of medium consistency. Now keep it aside and wash the spinach thoroughly so that all the impurities came out. Drain all the water from it and pat dry it.



- While making the batter add 1 tbsp of hot oil to it by this it doesn't absorb more oil. Now for the yoghurt dip beat the yoghurt and make it smooth. Take fresh and thick yoghurt. Now add the spices to it mentioned above and mix well. Keep it aside and fry some peanuts in 2 tbsp oil then take it out. Now add oil in the pan once get heated then take a spinach leaf coat it with prepared batter and put it in the hot oil. Make sure you spread the leaf in the oil so that it won't overlap.



- Flip it over when turns golden brown and cook from both sides then take it out. Like so fry all the spinach leaves. Once done frying then start assembling and serve hot. Make sure that the batter must not be thick else the leaves become soggy. You can even use cornflour in place of rice flour and you can add the spices as per your taste.



- For assembling take a serving plate and place 4-5 leaves to it then add yoghurt, tamarind chutney and green chutney on it. Sprinkle some masala on it then add namakpara, peanut, sev and some ginger julienne on top of it again some yoghurt mix, tamarind and green chutney and then add the second layer of spinach and again the same process. Top it with some coriander leaves or fried spinach and serve hot. Assembling totally depends on you. Assemble the way you like.
