- 1 brinjal cut into pieces
- 1 cup frozen sweet corn
- 3 medium potatoes cut into large cubes
- chopped coriander
- chopped mint
- 4 tbsp plain yoghurt
- 300 g carrots
- 1 and 1/2 cups basmati rice (rinsed)
- 300 g baby carrots
- 1/2 kg beef or mutton mince
Steps to make to make Sunday Pilau
- Melt butter in the pot. add cumin seeds, cinnamon sticks, cloves, ground coriander,salt,black pepper,turmeric,leaf masala and curry leaves. allow the heat to release the flavours of the spices

- Add the masala to the spices in the pot

- While stirring throw in all your veggies, tomato paste and yoghurt

- And

- Stir in the uncooked rice

- Add mince and 1 cup water. stir well.

- Let it cook on a high heat for about 20 mins until the rice becomes fluffy

- Stir occasionally to prevent the rice from sticking to the pot.
- Once the rice swells, turn down the heat to lowest. keep the lid closed. Allow the food to steam together for +- 30 mins. until the potatoes are soft. you can add another 1/4 cup water if u find your rice or potatoes uncooked.
- While you are waiting for this, prepare yoghurt with chopped fresh coriander, mint and salt to taste.
