- Soak Basmati rice in enough water for at least 30 minutes, then wash and drain.

- Marinade chicken pieces with curd, ginger, garlic and turmeric for 10 minutes.

- Heat ghee in a pressure cooker and put whole garam masala like cinnamon, cardamom, cloves and cumin seeds.

- Add sliced onions and sauté for 10 minutes or until golden brown.



- Add chopped tomatoes, chilli powder, biryani masala and cook until soft and mushy.


- Now add marinated chicken and salt.


- Mix well and let it cook for 5 minutes, then add rice.



- Add water and close with lid and put the weight on, cook up to 1 whistle and then put it at the lowest flame setting and cook for another 5 minutes.

- Mix food colour and saffron in milk and pour this on cooked biryani.



- Garnish with fried onions, fried cashews and coriander leaves.
