- Boiling Rice
- 2 cups Basmati Rice
- 1 Bay leaf
- 3-4 cloves
- 1 stick cinnamon
- 2-3 whole black pepper
- as per taste Salt
- as required Oil
- Vegetable Marinate
- 3-4 diced Carrot
- 6-7 sliced French beans
- as per need Some cauliflower
- 1/4 cup curd
- 1 1/2 tsp - red Chilli powder
- 1/2 tsp - turmeric powder
- 2tsp -Dhania powder
- 3/4tsp Garam masala
- 1/2tsp Black pepper
- as required Some mint leaves
- 2 1/2 tsp- biryani masala
- 1/4 tsp Cinnamon Powder
- Caramelized Onion
- 2 onions sliced
- as required Oil
- Saffron water
- 5-6 strands saffron
- 1/4cup warm water
- Dough for sealing
Instructions to make to make Veg Dum Biryani recipe
- First take 2 cups of Basmati rice wash them and soak them in water for 2 hr
- Take a vessel filled with water boil it and add a bay leaf, clove, whole black pepper, Cinnamon stick, salt and oil in the water and let it boil.
- Put the soaked rice in the boiling water and boil rice for 6-7 mins until rice are half cooked. Strain the rice.

- Now for vegetable marinate take carrot, French beans and cauliflower.

- To that add curd, red Chilli powder, dhania powder, garam masala, turmeric powder, Cinnamon powder, black pepper powder, salt and some mint leaves. Mix that well.

- Let the the vegetables marinate for 1 hr after that saute that on a pan for 4-5 mins.
- For caramelized onion take a pan and oil to that. Saute it on a high flame until onion colour changes to brown. After that turn flame to low for onion to become crisp.


- For saffron water infuse 5-6 saffron strands in some hot water.
- Now comes part of layering biryani. You can do that in hindi or kadhai.


- First add some layer of marinated veggies now add a layer of rice over it add the caramelized onion and the saffron water over it
- Cover the kadhai or hand with lid and seal it with some dough.


- First turn flame high for 2 mins. Then turn flame to the least and let biryani dum for 10-15 mins.
- Open the lid and the biryani is ready.
Serve it with some raita.
